Description

A comforting and hearty vegetable soup packed with fresh vegetables and flavorful Italian seasoning. This easy-to-make soup is perfect for a nutritious lunch or dinner and can be ready in just over 40 minutes.


Ingredients

Vegetables and Aromatics

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 zucchini, diced

Liquids and Seasonings

  • 1 tbsp olive oil
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Garnish

  • Fresh parsley, for garnish


Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook for 3–4 minutes until they are softened and fragrant.
  2. Add Vegetables: Stir in the diced carrots, chopped celery, and diced zucchini. Continue cooking for another 5 minutes to start softening the vegetables.
  3. Add Broth and Seasoning: Pour in the diced tomatoes with their juices, the vegetable broth, and add Italian seasoning. Stir everything together to combine the flavors.
  4. Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer gently for 20–25 minutes, or until all the vegetables are tender.
  5. Finish and Serve: Season the soup with salt and pepper according to your taste. Serve hot garnished with fresh parsley.

Notes

  • You can add other vegetables like green beans or potatoes for variation.
  • For a thicker soup, blend a portion of the soup and stir it back in.
  • Leftovers keep well in the refrigerator for up to 4 days and can be frozen for up to 3 months.
