Description

Hearty Steak Bites served on loaded baked russet potatoes make for a satisfying and flavorful meal. Tender sirloin steak pieces are seasoned and pan-seared to perfection, then piled atop fluffy baked potatoes loaded with cheddar cheese, sour cream, bacon, and green onions.

Ingredients

Steak Bites

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Baked Potatoes

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt, for seasoning the potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices cooked bacon, crumbled
  • 2 green onions, chopped
  • 1 tablespoon butter (optional)

Instructions

  1. Prepare Potatoes: Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pat them dry. Rub each potato with olive oil and sprinkle with salt to season the skin.
  2. Bake Potatoes: Place the potatoes directly on the oven rack and bake for about 45-60 minutes or until tender when pierced with a fork.
  3. Cook Steak Bites: While the potatoes bake, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season the steak pieces with garlic powder, onion powder, smoked paprika, salt, and pepper. Add the steak to the hot skillet and cook for about 3-4 minutes on each side until browned and cooked to desired doneness.
  4. Prepare Loaded Potatoes: Once the potatoes are baked, carefully slice them open lengthwise. Fluff the inside of each potato with a fork. Add 1 tablespoon butter inside each potato if desired, then sprinkle with shredded cheddar cheese to melt.
  5. Assemble and Serve: Remove the melted cheese potatoes from the oven, then top each with cooked steak bites. Garnish with sour cream, crumbled bacon, and chopped green onions. Serve immediately for a hearty and delicious meal.

Notes

  • Use medium to large russet potatoes for fluffy interiors.
  • Adjust steak cooking time depending on preferred doneness.
  • Butter is optional but adds extra richness to the potatoes.
  • Leftover steak bites and potatoes can be refrigerated and reheated.
  • For a smokier flavor, use smoked paprika or add a dash of cayenne pepper.
