Filling
- 1 tablespoon olive oil
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) hearts of palm, drained and chopped
- 1/4 cup cream cheese, softened
- 1 tablespoon Dijon mustard
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste

- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat and prepare baking sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Sauté onions and garlic: In a skillet over medium heat, warm the olive oil. Add the finely chopped onion and sauté until soft and translucent, about 3 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
- Cook hearts of palm: Stir in the chopped hearts of palm and cook for 2 to 3 minutes to combine flavors and warm through. Remove the skillet from heat and let the mixture cool slightly.
- Mix the filling: In a bowl, combine the sautéed hearts of palm mixture with softened cream cheese, Dijon mustard, smoked paprika, and salt and pepper to taste. Mix well to create a creamy, flavorful filling.
- Prepare the puff pastry: On a floured surface, roll out the thawed puff pastry if needed and cut it into 8 equal rectangles.
- Assemble hand pies: Place a spoonful of the filling onto one side of each pastry rectangle, leaving a small border around the edges. Fold the pastry over the filling, creating a pocket, and press the edges firmly with a fork to seal.
- Apply egg wash and bake: Transfer the hand pies to the prepared baking sheet. Brush the tops with the beaten egg wash to achieve a beautiful golden glaze. Bake in the preheated oven for 18–20 minutes or until the hand pies are puffed and golden brown.
- Cool and serve: Remove from the oven and let the hand pies cool slightly before serving warm or at room temperature.
