Description

This Healthy Spinach Artichoke Dip is a lighter twist on the classic creamy appetizer, combining tender artichoke hearts, nutrient-rich spinach, and Parmesan cheese with Greek yogurt for a deliciously tangy flavor. Perfect served hot or cold, it’s a versatile and nutritious snack that pairs beautifully with toasted baguette, tortilla chips, or fresh veggies.

Ingredients

Dip Ingredients

  • 1 can artichoke hearts (14 oz)
  • 1 cup frozen spinach (or kale) (60g)
  • 2/3 cup Parmesan cheese (or nutritional yeast) (60g)
  • 1/2 cup Greek yogurt (or dairy-free alternative) (120g)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Instructions

  1. Preheat the oven: If you prefer a warm dip, preheat your oven to 350° Fahrenheit (177° Celsius).
  2. Prepare the vegetables: Drain the artichoke hearts thoroughly but do not rinse. Squeeze out excess moisture from the frozen spinach and roughly chop both the artichokes and spinach to create manageable pieces.
  3. Combine ingredients: Place the chopped artichokes, spinach, Parmesan cheese, Greek yogurt, salt, and garlic powder into a heat-safe bowl. Stir thoroughly until all ingredients are evenly mixed.
  4. Serve chilled or warm: You can enjoy the dip immediately as a cool appetizer, or bake it in the center rack of the oven for 20 minutes until it’s hot, bubbly, and lightly browned on top. Alternatively, microwave it for 5 minutes, stirring halfway through to ensure even heating.
  5. Serving suggestions: Serve the dip hot from the oven accompanied by toasted baguette slices, tortilla chips, or a selection of raw vegetables for dipping.
  6. Storage: Store any leftovers in an airtight container in the refrigerator for up to five days to maintain freshness.

Notes

  • You can substitute kale for spinach or nutritional yeast for Parmesan cheese to make a vegan version.
  • To avoid a watery dip, make sure to squeeze out excess moisture from the spinach thoroughly.
  • If you prefer a lower-fat option, use a dairy-free yogurt alternative and nutritional yeast.
  • This dip can be served cold or baked for a warm, melty texture based on preference.
  • Reheat leftovers gently to preserve texture and flavor.
