Ingredients
Cookies:
- 1 cup canned pumpkin puree
- 1/3 cup coconut oil, melted
- 1/2 cup pure maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat pastry flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
Frosting:
- 1/4 cup plain Greek yogurt
- 2 tbsp pure maple syrup
- 1/2 tsp vanilla extract
- pinch of sea salt
Instructions
- Preheat oven: Preheat oven to 350°F and line a baking sheet with parchment paper.
- Mix wet ingredients: In a large bowl, whisk together pumpkin puree, melted coconut oil, maple syrup, egg, and vanilla until smooth.
- Combine dry ingredients: In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
- Combine wet and dry: Gradually stir the dry ingredients into the wet ingredients until just combined.
- Bake: Scoop tablespoons of dough onto the prepared baking sheet, spacing evenly. Bake for 10–12 minutes until set and lightly golden. Cool on a wire rack.
- Make frosting: Whisk together Greek yogurt, maple syrup, vanilla, and sea salt until smooth.
- Frost cookies: Once cookies are cool, spread frosting on each. Store in the refrigerator.
