Description

Ingredients

Cookies:

  • 1 cup canned pumpkin puree
  • 1/3 cup coconut oil, melted
  • 1/2 cup pure maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat pastry flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves

Frosting:

  • 1/4 cup plain Greek yogurt
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of sea salt

Instructions

  1. Preheat oven: Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, whisk together pumpkin puree, melted coconut oil, maple syrup, egg, and vanilla until smooth.
  3. Combine dry ingredients: In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Combine wet and dry: Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Bake: Scoop tablespoons of dough onto the prepared baking sheet, spacing evenly. Bake for 10–12 minutes until set and lightly golden. Cool on a wire rack.
  6. Make frosting: Whisk together Greek yogurt, maple syrup, vanilla, and sea salt until smooth.
  7. Frost cookies: Once cookies are cool, spread frosting on each. Store in the refrigerator.
