- ½ cup natural peanut butter
- ¼ cup coconut oil
- ¼ cup honey or maple syrup
- ¼ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- pinch of salt
- 2 tablespoons chia seeds or ground flaxseed (optional)
Instructions
- In a saucepan, mix ingredients: Combine coconut oil, peanut butter, honey (or maple syrup), cocoa powder, and salt over low heat. Stir until smooth for 2-3 minutes.
- Add vanilla and oats: Remove from heat, mix in vanilla extract. Add oats and chia seeds/flaxseed (optional), stir until coated.
- Form the cookies: Drop spoonfuls onto a lined sheet, flatten with a spoon. Chill for 30 minutes until set.
- Store: Keep in an airtight container in the fridge.
