Ingredients

    Peanut Butter Mixture:

  • 1 cup natural peanut butter (creamy)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Chocolate Layer:

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil (for melting chocolate)

Instructions

  1. Prepare Peanut Butter Mixture: Line an 8×8-inch baking pan with parchment paper. Combine peanut butter, honey or maple syrup, and 2 tablespoons coconut oil in a saucepan over low heat. Stir until smooth. Remove from heat, add vanilla extract and salt. Fold in crispy rice cereal.
  2. Form Bars: Press the mixture into the pan evenly. Melt chocolate chips and 1 tablespoon coconut oil in the microwave. Pour over the cereal mixture.
  3. Chill and Serve: Refrigerate for at least 1 hour. Slice into bars and enjoy!

Notes

  • For a firmer texture, store bars in the refrigerator. For a softer bite, store at room temperature.
  • Almond butter or sunflower seed butter can be used as nut-free alternatives.
