Ingredients
Lentils and Liquids
- 1 cup green or brown lentils, rinsed
- 1 can (14 oz) coconut milk
- 3 cups vegetable broth
Vegetables
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 cup bell peppers, chopped
- 1 cup fresh spinach
- 1 medium carrot, diced
Seasonings and Extras
- 2 tablespoons curry powder
- 1 tablespoon cooking oil (vegetable or olive oil)
- 1 tablespoon lemon juice
Instructions
- Prepare Ingredients: Gather all ingredients on your counter to ensure a smooth cooking process and easy access during preparation.
- Sauté Aromatics: Heat oil in a large pot over medium heat. Add the chopped onions, minced garlic, and ginger, sautéing for 3-4 minutes until fragrant and translucent, which will build the flavor base.
- Add Spices and Lentils: Stir in curry powder and the rinsed lentils, toasting them briefly to enhance their flavors and deepen the aroma.
- Add Liquids and Simmer: Pour in the vegetable broth and coconut milk. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer uncovered for 25-30 minutes, or until the lentils are tender and cooked through.
- Add Vegetables: About 10 minutes before the end of cooking, add the chopped bell peppers, spinach, and carrots to the pot, allowing them to soften slightly but retain some crunch and color.
- Finish with Lemon Juice: Just before serving, stir in a splash of lemon juice to add brightness and balance to the curry.
Notes
- Rinse lentils thoroughly to remove any debris before cooking.
