Ingredients
Dry Ingredients:
- 1 cup rolled oats
- 1/4 cup unsweetened shredded coconut
- 2 tablespoons ground flaxseed
- pinch of salt
Wet Ingredients:
- 1/2 cup natural peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup dark chocolate chips (optional)
- mini chocolate eggs or fresh berries for topping
Instructions
- Mix Ingredients: In a medium bowl, combine oats, peanut butter, honey, coconut, flaxseed, vanilla, and salt. Fold in chocolate chips if desired.
- Shape Cookies: Scoop out portions and form into round cookies. Create a small nest shape in the center of each.
- Chill: Refrigerate the cookies for at least 20 minutes to firm up.
- Add Toppings: Once set, place mini chocolate eggs or berries in the center of each nest.
- Store: Keep refrigerated until ready to serve.

- To make these vegan, use maple syrup instead of honey and ensure your chocolate eggs are dairy-free.
- For nut-free, substitute sunflower seed butter.
