Description

Ingredients

Dry Ingredients:

  • 1 cup rolled oats
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons ground flaxseed
  • pinch of salt

Wet Ingredients:

  • 1/2 cup natural peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips (optional)
  • mini chocolate eggs or fresh berries for topping

Instructions

  1. Mix Ingredients: In a medium bowl, combine oats, peanut butter, honey, coconut, flaxseed, vanilla, and salt. Fold in chocolate chips if desired.
  2. Shape Cookies: Scoop out portions and form into round cookies. Create a small nest shape in the center of each.
