Description

Ingredients

  • 4 chicken leg quarters
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup low-sodium chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced

Instructions

  1. Pat the chicken leg quarters dry and season with salt, pepper, paprika, and thyme.
  2. Heat olive oil in a skillet over medium heat and brown the chicken on both sides for 3–4 minutes.
  3. Place sliced onions, carrots, celery, and garlic in the bottom of the crockpot.
  4. Add the browned chicken on top of the vegetables.
  5. Pour the chicken broth over the contents in the crockpot.
  6. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is cooked through and tender.
  7. Optional: Place chicken under the broiler for 3–5 minutes to crisp the skin before serving.

Notes

  • You can skip browning the chicken to save time, though it adds extra flavor.
  • Add potatoes or other root vegetables for a heartier meal.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
