- 4 chicken leg quarters
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/2 cup low-sodium chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
Instructions
- Pat the chicken leg quarters dry and season with salt, pepper, paprika, and thyme.
- Heat olive oil in a skillet over medium heat and brown the chicken on both sides for 3–4 minutes.
- Place sliced onions, carrots, celery, and garlic in the bottom of the crockpot.
- Add the browned chicken on top of the vegetables.
- Pour the chicken broth over the contents in the crockpot.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is cooked through and tender.
- Optional: Place chicken under the broiler for 3–5 minutes to crisp the skin before serving.
Notes
- You can skip browning the chicken to save time, though it adds extra flavor.
- Add potatoes or other root vegetables for a heartier meal.
- Store leftovers in an airtight container in the fridge for up to 3 days.
