Description

Ingredients

Dry Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/3 cup coconut oil (melted)
  • 1/3 cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-Ins (Optional):

  • 1/3 cup dark chocolate chips or chopped dark chocolate
  • 1/4 cup chopped nuts or seeds
  • 1/4 cup raisins or dried cranberries


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large bowl, combine oats, almond flour, baking soda, cinnamon, and salt.
  3. Prepare wet ingredients: In a separate bowl, whisk together melted coconut oil, maple syrup or honey, egg, and vanilla extract.
  4. Combine and fold: Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in chocolate chips, nuts, and dried fruit if using.
  5. Bake: Scoop the dough onto the baking sheet, flatten slightly, and bake for 10–12 minutes until golden brown.
  6. Cool: Let cool on the baking sheet before transferring to a wire rack.

Notes

  • You can substitute a flax egg for a vegan version.
  • Store in an airtight container for up to 5 days or freeze for longer storage.
