Ingredients
Beef and Aromatics
- 1 lb lean ground beef
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- ½ onion, thinly sliced
Vegetables
- 4 cups shredded green cabbage
- 1 cup shredded carrots
Sauces and Garnishes
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce (optional for sweetness)
- 1 teaspoon chili garlic sauce or sriracha (optional for heat)
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- Cook the Ground Beef: Heat sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked. Drain excess fat if necessary.
- Sauté Aromatics: Add the minced garlic, fresh ginger, and sliced onion to the skillet. Sauté for 2–3 minutes until fragrant and the onion softens.
- Cook Vegetables: Stir in the shredded cabbage and carrots. Cook for 5–7 minutes, stirring frequently, until the vegetables are tender yet still crisp.
- Add Sauces: In a small bowl, combine the soy sauce, rice vinegar, hoisin sauce (if using), and chili garlic sauce. Pour this mixture over the beef and vegetable combination, tossing well to coat everything evenly.
- Simmer and Garnish: Cook for another 2–3 minutes to allow the flavors to meld. Remove from heat and top with sliced green onions and sesame seeds. Serve warm on its own or over rice or cauliflower rice for a low-carb option.
Notes
- This dish is great for meal prep and reheats well.
- Substitute ground turkey or chicken for a lighter version.
- Adjust spice level according to your preference by modifying or omitting the chili garlic sauce.
- Use tamari instead of soy sauce to make the dish gluten-free.
- Serve with cauliflower rice for a low-carb meal.
