Description

A delicious and healthy Chinese-inspired ground beef and cabbage stir fry that is quick and easy to make. This flavorful dish is perfect for a satisfying weeknight dinner.


Ingredients

For the Stir Fry:

  • 1 pound lean ground beef
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ½ onion, thinly sliced
  • 4 cups green cabbage, shredded
  • 1 large carrot, julienned or shredded
  • 1/4 cup low-sodium soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional)
  • 2 green onions, chopped
  • 1 teaspoon toasted sesame seeds (optional)
  • Salt and pepper to taste


Instructions

  1. Cook the Ground Beef: In a large skillet or wok, heat sesame oil over medium-high heat. Add ground beef and cook until fully browned, about 5-6 minutes. Drain any excess fat.
  2. Sauté Aromatics: Add garlic, ginger, and onion to the skillet. Sauté for 2-3 minutes until fragrant.
  3. Add Vegetables: Stir in cabbage and carrot, cook for 4-5 minutes until tender-crisp.
  4. Make the Sauce: Whisk soy sauce, rice vinegar, and hoisin sauce. Pour over beef and vegetables. Stir well.
  5. Thicken the Sauce: If desired, stir in cornstarch slurry and cook for 1-2 minutes until slightly thickened.
  6. Garnish and Serve: Remove from heat, garnish with green onions and sesame seeds. Serve over rice, cauliflower rice, or noodles.

Notes

  • Substitute ground turkey or chicken for a lighter version.
  • Enhance with bell peppers or snap peas for extra veggies.
  • Leftovers reheat well, making it a great meal prep option.
