Ingredients

Dry Ingredients:

  • 1 cup rolled oats
  • 1/2 cup vanilla or unflavored protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 tablespoon flour (optional, for coating berries)

Wet Ingredients:

  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk (or any milk)

Additions:

  • 1 cup mixed berries (fresh or frozen)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease cups.
  2. Mix Oats and Yogurt: In a bowl, mix oats and Greek yogurt; let sit to soften for 5–10 minutes.
  3. Add Wet Ingredients: Incorporate eggs, honey/maple syrup, vanilla, baking powder, baking soda, salt, cinnamon, protein powder, and almond milk; stir until combined.
  4. Prepare Berries: Coat berries in flour if using frozen, then gently fold into batter.
  5. Bake: Divide batter into muffin cups, bake for 18-22 minutes until a toothpick comes out clean, and cool on a rack.
