Description

This Havarti Butternut Squash Lasagna is a comforting vegetarian dish combining the creamy richness of Havarti and ricotta cheeses with the sweet, tender roasted butternut squash and vibrant spinach. Ingredients

Lasagna Components

  • 9 lasagna noodles (traditional or no-boil)
  • 2 cups cubed butternut squash
  • 2 cups shredded Havarti cheese
  • 1 cup ricotta cheese
  • 2 cups fresh spinach

Seasonings and Oils

  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick spray to ensure the lasagna doesn’t stick during baking.
  2. Roast the Butternut Squash: Toss the cubed butternut squash with olive oil, minced garlic, Italian seasoning, salt, and pepper. Spread evenly on a baking sheet or directly in the baking dish and roast for about 25 minutes until the squash is tender and slightly caramelized.
  3. Sauté Spinach: Heat a small amount of olive oil in a skillet over medium heat. Add the fresh spinach and sauté for about 3 minutes until wilted. Remove from heat and set aside.
  4. Prepare Ricotta Mixture: In a bowl, combine the ricotta cheese with salt, pepper, and a sprinkle of Italian seasoning. Mix thoroughly until smooth and well-seasoned.
  5. Assemble Lasagna: Begin layering the lasagna in the prepared baking dish starting with a layer of roasted butternut squash at the bottom. Then add a layer of lasagna noodles, followed by sautéed spinach, the ricotta mixture, and shredded Havarti cheese. Repeat these layers until all components are used, finishing with a top layer of noodles covered by sauce and Havarti cheese.
  6. Bake the Lasagna: Cover the assembled lasagna with foil and bake for 30 minutes. After that, remove the foil and continue baking uncovered for an additional 10 minutes to develop a golden, cheesy crust on top.

  • Use no-boil noodles to skip pre-cooking, but if using traditional noodles, cook them according to package instructions before assembling.
