For the Casserole
- 1 lb ground beef
- 1 small onion, diced
- 4 medium russet potatoes, thinly sliced
- 2 cups shredded sharp cheddar cheese, divided
- 1 (10.5 oz) can condensed cream of mushroom soup
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder (optional)

Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with cooking spray or a little oil.
- Cook the ground beef and onions: In a large skillet over medium heat, cook the ground beef and diced onions until the beef is well browned and the onions are softened, about 5-7 minutes. Drain any excess fat. Season the mixture with salt, pepper, and garlic powder.
- Prepare the sauce: In a bowl, whisk together the condensed cream of mushroom soup and milk until smooth and well combined.
- Layer the casserole: Arrange half of the sliced potatoes in an even layer at the bottom of the baking dish. Top with half of the beef mixture, then sprinkle 1 cup of cheddar cheese over it. Spoon half of the soup mixture over the cheese. Repeat the layers with remaining potatoes, beef, and soup mixture, finishing with the last cup of cheddar cheese on top.
- Bake the casserole: Cover the dish with foil and bake for 60 minutes. Then remove the foil and bake an additional 15-20 minutes, until the top is golden and the potatoes are tender when pierced with a fork.
- Garnish and serve: Let the casserole cool 5-10 minutes before serving. Garnish with chopped parsley or green onions if desired.
