Description

A vibrant Mediterranean wrap featuring crispy fried halloumi, fresh vegetables, and creamy homemade tzatziki all nestled in a soft tortilla.


Ingredients

  • 200g halloumi cheese, sliced into 1/2-inch planks
  • 4 tortilla wraps
  • 1 English cucumber (half grated for tzatziki, half sliced for topping)
  • 1 cup Greek yogurt
  • 1 garlic clove, finely minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 2 tbsp olive oil (plus more for drizzling)
  • 1-2 tomatoes, thinly sliced
  • 1/4 red onion, thinly sliced
  • Salt and black pepper to taste


Instructions

  1. Grate half the cucumber and squeeze out excess moisture.
  2. In a bowl, mix the grated cucumber with Greek yogurt, garlic, dill, lemon juice, a drizzle of olive oil, salt, and pepper. Chill in the fridge.
  3. Heat olive oil in a non-stick skillet over medium-high heat. Fry halloumi slices for 2-3 minutes per side until golden and crispy.
  4. Slice the remaining cucumber, tomatoes, and red onion thinly.
  5. Lay out the tortillas. Spread each with tzatziki, then top with halloumi, tomatoes, onions, and cucumber slices.
  6. Season with additional salt and pepper if needed. Fold and roll the wraps tightly.
  7. Slice in half if desired, and serve with extra tzatziki on the side.

Notes

  • Garnish with fresh dill, mint, chili flakes, or smoked paprika for added flavor and presentation.
  • Serve with Greek salad, roasted potatoes, or veggie chips.
  • Wraps can be stored in the fridge for 24 hours; keep components separate for best results.
