Ingredients
- 200g halloumi cheese, sliced into 1/2-inch planks
- 4 tortilla wraps
- 1 English cucumber (half grated for tzatziki, half sliced for topping)
- 1 cup Greek yogurt
- 1 garlic clove, finely minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 2 tbsp olive oil (plus more for drizzling)
- 1-2 tomatoes, thinly sliced
- 1/4 red onion, thinly sliced
- Salt and black pepper to taste
Instructions
- Grate half the cucumber and squeeze out excess moisture.
- In a bowl, mix the grated cucumber with Greek yogurt, garlic, dill, lemon juice, a drizzle of olive oil, salt, and pepper. Chill in the fridge.
- Heat olive oil in a non-stick skillet over medium-high heat. Fry halloumi slices for 2-3 minutes per side until golden and crispy.
- Slice the remaining cucumber, tomatoes, and red onion thinly.
- Lay out the tortillas. Spread each with tzatziki, then top with halloumi, tomatoes, onions, and cucumber slices.
- Season with additional salt and pepper if needed. Fold and roll the wraps tightly.
- Slice in half if desired, and serve with extra tzatziki on the side.
Notes
- Garnish with fresh dill, mint, chili flakes, or smoked paprika for added flavor and presentation.
- Serve with Greek salad, roasted potatoes, or veggie chips.
- Wraps can be stored in the fridge for 24 hours; keep components separate for best results.
