Description

This Halloumi, Honey, and Avocado Bagel is a savory-sweet breakfast or brunch sandwich that’s bursting with texture and flavor. Crispy, golden halloumi pairs perfectly with creamy avocado and a drizzle of honey, all stacked on a toasted bagel for a satisfying bite that feels indulgent yet wholesome.

Ingredients

Main Ingredients

  • 1 bagel, sliced and toasted
  • 34 slices halloumi cheese (about 3 oz)
  • 1/2 ripe avocado, sliced or mashed
  • 12 teaspoons honey
  • 1/2 tablespoon olive oil
  • Pinch of chili flakes or cracked black pepper (optional)
  • Fresh arugula or baby spinach (optional, for layering)

Instructions

  1. Heat pan and cook halloumi: Heat olive oil in a skillet over medium heat. Add the halloumi slices and cook for 2–3 minutes per side until golden brown and crispy, ensuring they develop a nice crust without burning.
  2. Toast the bagel: While the halloumi cooks, toast the bagel halves to your desired level of crispness, either in a toaster or on a pan.
  3. Prepare the base: Spread or layer the sliced or mashed avocado onto the bottom half of the toasted bagel, creating a creamy and rich base for the sandwich.
  4. Assemble the sandwich: Place the warm halloumi cheese on top of the avocado layer, then drizzle 1 to 2 teaspoons of honey evenly over the halloumi to add a sweet contrast.
  5. Add optional seasoning and greens: Sprinkle a pinch of chili flakes or cracked black pepper over the honey-drizzled halloumi for a subtle kick. Add a few leaves of fresh arugula or baby spinach for a fresh, peppery layer.
  6. Complete and serve: Place the top half of the bagel on the sandwich, press gently, and serve immediately while warm for the best flavor and texture.

Notes

  • For extra flavor, add a squeeze of fresh lemon juice over the avocado before assembling.
  • Swap the honey for hot honey to add a spicy-sweet twist.
  • Use a multigrain or seeded bagel for added texture and nutritional value.
