Description

A cozy one-pan meal featuring lean ground turkey, golden potatoes, and vibrant veggies simmered in savory broth. Hearty, flavorful, and perfect for easy weeknight dinners or meal prep.


Ingredients

  • 1 lb ground turkey
  • 2 cups diced potatoes (yellow or red)
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  •  cups chicken or vegetable broth
  • Optional garnish: fresh parsley or sliced scallions


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey and season with salt and pepper. Brown and crumble for about 5–7 minutes.
  2. Add diced onion and bell pepper. Sauté for 4–5 minutes until softened. Stir in garlic and cook until fragrant.
  3. Sprinkle in smoked paprika and dried oregano, stirring to coat.
  4. Add diced potatoes and toss briefly, then pour in broth until it reaches halfway up the potatoes.
  5. Bring to a simmer, reduce heat to medium-low, cover, and cook for 15–20 minutes until potatoes are tender. Uncover in the last few minutes to let excess liquid evaporate, if desired.
  6. Taste and adjust seasonings. Garnish with parsley or scallions, then serve straight from the pan.

Notes

  • Serve with crusty bread, brown rice, or a green salad for a complete meal.
  • Taste before serving and add a squeeze of lemon or dollop of Greek yogurt for brightness.
  • Mix in diced carrots, peas, or spinach for extra veggies. Add hearty ones early; stir in greens at the end.
  • Reheat leftovers with a splash of broth to revive the veggies and potatoes.
