Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 2–3 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
- Cook Turkey: Add the ground turkey to the skillet and cook until browned and fully cooked, breaking it up with a spoon. Season with paprika, dried thyme, cumin, salt, and pepper, mixing well.
- Add Sweet Potatoes and Broth: Stir in the diced sweet potatoes and low-sodium chicken broth. Cover the skillet and let it simmer for 8–10 minutes, or until the sweet potatoes are just tender.
- Transfer to Baking Dish: Grease a 9×9-inch or similar baking dish. Transfer the cooked mixture evenly into the dish.
- Add Cheese: Sprinkle shredded mozzarella or cheddar cheese evenly over the top of the mixture.
- Bake: Bake in the preheated oven for 15–20 minutes until the cheese is melted, bubbly, and the sweet potatoes are fully cooked through.
- Cool and Garnish: Remove from oven and let the casserole cool for 5 minutes. Garnish with chopped fresh parsley if desired before serving.
