Ingredients

Ground Turkey Mixture:

1 lb ground turkey, 2 tablespoons olive oil, 1 medium yellow onion (diced), 2 cloves garlic (minced), 1 red bell pepper (diced), 1 green bell pepper (diced), 2 medium sweet potatoes (peeled and cubed),

Seasonings:

1 teaspoon smoked paprika, 1/2 teaspoon ground cumin, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, 1/4 teaspoon black pepper,

Additional:

1/4 cup chicken broth, 1/2 cup shredded mozzarella or cheddar cheese (optional), fresh parsley for garnish


Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C).
  2. Cook the Turkey: In a large skillet, brown the ground turkey in 1 tablespoon of olive oil, then set aside.
  3. Sauté Vegetables: In the same skillet, sauté onion, garlic, bell peppers, and sweet potatoes until tender.
  4. Combine Ingredients: Return the turkey to the skillet, add seasonings, chicken broth, and mix well.
  5. Bake: Transfer the mixture to a baking dish, cover, and bake for 25 minutes. Uncover, add cheese if desired, and bake for an additional 10–15 minutes.
