Description

A hearty and flavorful Ground Turkey and Sweet Potato Skillet Delight that combines tender ground turkey, sweet potatoes, and vibrant vegetables, seasoned with smoked paprika and cumin for a perfect weeknight meal. This skillet dish is quick to prepare and ideal for a nutritious and balanced dinner.

Ingredients

Protein and Vegetables

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup baby spinach (optional, for added greens)

Spices and Garnishes

  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for 5-7 minutes, stirring occasionally, until they begin to soften and brown slightly.
  2. Brown Ground Turkey: Push the sweet potatoes to one side of the skillet. In the same skillet, add the ground turkey. Break it apart with a spoon and cook for 5-7 minutes, until browned and fully cooked through.
  3. Sauté Vegetables: Add the onion, garlic, and bell pepper to the skillet with the turkey. Cook for 3-4 minutes, until the vegetables are softened.
  4. Add Spices: Sprinkle the smoked paprika, cumin, oregano, salt, and pepper over the turkey and sweet potatoes. Stir to combine and cook for another 2-3 minutes, allowing the spices to fully incorporate.
  5. Wilt Spinach (Optional): If using, stir in the baby spinach and cook for another minute, just until wilted.
  6. Garnish: Remove from heat and garnish with chopped cilantro and a squeeze of lime juice, if desired.
  7. Serve: Serve immediately as a filling and flavorful main dish!

Notes

  • For extra heat, add a pinch of red chili flakes when adding spices.
  • Swap ground turkey with ground chicken or lean ground beef if preferred.
  • Sweet potatoes can be substituted with butternut squash or regular potatoes.
  • Ensure to cook ground turkey thoroughly to an internal temperature of 165°F (74°C).
  • Adding baby spinach is optional but boosts the nutritional value with added greens.
