Instructions
- Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for 5-7 minutes, stirring occasionally, until they begin to soften and brown slightly.
- Brown Ground Turkey: Push the sweet potatoes to one side of the skillet. In the same skillet, add the ground turkey. Break it apart with a spoon and cook for 5-7 minutes, until browned and fully cooked through.
- Sauté Vegetables: Add the onion, garlic, and bell pepper to the skillet with the turkey. Cook for 3-4 minutes, until the vegetables are softened.
- Add Spices: Sprinkle the smoked paprika, cumin, oregano, salt, and pepper over the turkey and sweet potatoes. Stir to combine and cook for another 2-3 minutes, allowing the spices to fully incorporate.
- Wilt Spinach (Optional): If using, stir in the baby spinach and cook for another minute, just until wilted.
- Garnish: Remove from heat and garnish with chopped cilantro and a squeeze of lime juice, if desired.
