Ingredients
Protein and Main Ingredients
- 1 pound lean ground chicken
- 3 cups cooked long-grain rice (preferably day-old)
- 2 large eggs (lightly beaten)
Vegetables
- 1 medium onion (diced)
- 2 carrots (peeled and diced)
- 1 cup frozen peas
- 2 cloves garlic (minced)
- 2 green onions (thinly sliced, for garnish)
Oils and Seasonings
- 2 tablespoons vegetable oil (divided)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon white pepper
Instructions
- Prep your ingredients: Chop all vegetables and measure seasonings to ensure a smooth and efficient cooking process.
- Cook the ground chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the ground chicken, breaking it up with a wooden spoon. Cook for 5-7 minutes until no longer pink and slightly browned.
- Sauté the vegetables: Push the chicken to one side of the pan. Add the remaining tablespoon of oil if needed. Add diced onions and carrots, cooking for 2-3 minutes until they soften.
- Scramble the eggs: Push chicken and veggies to one side, creating space. Pour in the beaten eggs and scramble continuously for 1-2 minutes until fully cooked. Mix the eggs with the chicken and vegetables.
- Add the rice: Add day-old rice to the pan, breaking up clumps. Stir-fry with chicken, veggies, and eggs for 3-4 minutes to allow the rice to absorb flavors and get slightly crisp.
- Season and finish: Pour in soy sauce and sesame oil. Add frozen peas. Stir and cook for 2-3 minutes until heated through and flavors meld.
- Garnish and serve: Sprinkle white pepper over the fried rice and garnish with sliced green onions before serving.
Notes
- Using day-old rice prevents clumping and promotes better texture in fried rice.
- Feel free to substitute ground chicken with ground turkey or pork based on preference.
- Adjust soy sauce quantity to taste for saltiness.
- For extra crunch, add chopped water chestnuts or bell peppers along with carrots and onions.
- Ensure to cook on medium-high heat to achieve proper stir-fry texture and flavors.
