Ingredients
Ground Beef Mixture:
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 3 cups zucchini (sliced into half-moons)
- 1 (10.5 oz) can condensed cream of mushroom soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Stuffing Topping:
- 1 1/2 cups seasoned stuffing mix
- 3 tbsp melted butter
Instructions
- Preheat the oven: Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
- Cook ground beef: In a large skillet over medium heat, cook the ground beef until browned. Set aside.
- Sauté vegetables: In the same skillet, sauté onion and garlic until soft. Add zucchini and cook until tender.
- Combine ingredients: Return beef to the skillet, add mushroom soup, sour cream, cheddar cheese, basil, salt, and pepper. Mix well.
- Assemble casserole: Transfer mixture to baking dish.
- Add topping: Combine stuffing mix and butter. Sprinkle over casserole.
- Bake: Bake uncovered for 25–30 minutes until golden and bubbly.
