Ingredients
For the Chili:
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 pounds ground beef
- 1 can (15 ounces) diced tomatoes
- 1 can (6 ounces) tomato paste
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 ½ cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional)
For Serving:
- Shredded cheese
- Chopped green onions
- Sour cream
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and bell pepper and sauté until softened, about 5 minutes.
- Add minced garlic and cook for another minute.
- Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
- Stir in the diced tomatoes, tomato paste, kidney beans, pinto beans, and beef broth.
- Add chili powder, cumin, paprika, oregano, salt, black pepper, and red pepper flakes if using. Stir well to combine.
- Bring to a boil, then reduce the heat and simmer uncovered for 30–40 minutes, stirring occasionally, until thickened.
- Serve hot with desired toppings.
Notes
- You can adjust the spice level by adding more chili powder or hot sauce.
- Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
