Description

These vibrant, Tex-Mex-inspired bowls are loaded with seasoned ground beef, fluffy rice, colorful toppings, and bold flavor in every bite—perfect for a quick weeknight dinner or customizable meal prep.


Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 3 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
  • 1 cup shredded lettuce
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving


Instructions

  1. Cook rice according to package directions. For extra flavor, add lime juice and chopped cilantro after cooking.
  2. In a large skillet over medium-high heat, brown the ground beef. Drain any excess fat.
  3. Add onion and cook until softened. Stir in garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 1–2 minutes until fragrant.
  4. Stir in black beans, corn, and diced tomatoes. Simmer for 3–4 minutes until everything is heated through and well combined.
  5. To assemble, layer cooked rice in bowls, top with the beef mixture, and sprinkle with shredded cheese.
  6. Add shredded lettuce, a dollop of sour cream, fresh cilantro, and lime wedges before serving.
