Ingredients
- 1 lb ground beef
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced tomatoes
- 3 cups cooked rice (white, brown, or cauliflower rice)
- 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
- 1 cup shredded lettuce
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- Cook rice according to package directions. For extra flavor, add lime juice and chopped cilantro after cooking.
- In a large skillet over medium-high heat, brown the ground beef. Drain any excess fat.
- Add onion and cook until softened. Stir in garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Stir in black beans, corn, and diced tomatoes. Simmer for 3–4 minutes until everything is heated through and well combined.
- To assemble, layer cooked rice in bowls, top with the beef mixture, and sprinkle with shredded cheese.
- Add shredded lettuce, a dollop of sour cream, fresh cilantro, and lime wedges before serving.
