  • 1/4 cup tomato sauce

  • 2 cups cooked white or brown rice
  • 1/4 cup chopped cilantro (optional)
  • Juice of 1 lime (optional, for cilantro lime rice)

Bowl Toppings

  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned and drained)
  • 1 large tomato, diced (or 1 cup pico de gallo)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 avocado, sliced or cubed
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup sliced green onions or fresh cilantro

Instructions

  1. Cook the Ground Beef: In a large skillet over medium-high heat, add the ground beef and diced onion. Cook, breaking up the meat with a spatula, until the beef is browned and the onion is soft, 6-8 minutes. Drain excess fat if needed. Add garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir for 1 minute until fragrant. Mix in tomato sauce, reduce heat, and let simmer for 2-3 minutes until slightly thickened.
  2. Prepare the Rice: While the beef cooks, prepare the rice according to package instructions if not already cooked. For cilantro-lime rice, stir chopped cilantro and lime juice into the warm rice just before serving.
  3. Prepare the Toppings: While the beef simmers, assemble the toppings: rinse and drain beans, dice tomatoes or prepare pico de gallo, slice avocado, and shred cheese if necessary.
