Description

This Ground Beef Bowls recipe features a wholesome and flavorful combination of roasted sweet potatoes, spiced ground beef, and fresh, vibrant toppings. Ready in just 40 minutes, these bowls offer a balanced meal packed with protein, vegetables, and a mix of creamy and tangy elements, finished with a drizzle of hot honey and a dollop of hummus for extra richness.

Ingredients

Roasted Sweet Potatoes

  • 1 pound sweet potatoes, peeled and diced
  • 2 Tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika

Seasoned Ground Beef

  • 1 pound lean ground beef
  • 1 teaspoon 7 spice
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Fresh Toppings

  • 1 cup cottage cheese
  • 1 cup diced cucumber
  • 1 cup chopped tomatoes
  • ½ cup sliced radishes
  • ¼ cup sliced red onions
  • ¼ cup feta cheese crumbles
  • ¼ cup olives (Kalamata or green)

Finishing Touches

  • Hot honey (for drizzling)
  • Hummus (for dolloping)

Instructions

  1. Prepare and Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the diced and peeled sweet potatoes in olive oil, smoked paprika, sea salt, and black pepper until evenly coated. Spread them out in a single layer on a baking sheet. Roast in the oven for 25 to 30 minutes, flipping the potatoes halfway through, until they are golden brown and tender.
  2. Cook the Ground Beef: While the sweet potatoes roast, heat a large skillet over medium heat. Add the ground beef and break it up with a spoon as it cooks. When the beef begins to brown, season it with 7 spice, sea salt, and ground black pepper. Continue cooking and stirring occasionally until the beef is fully cooked and fragrant.
  3. Prepare Fresh Toppings: Meanwhile, dice the cucumbers, chop the tomatoes, slice the radishes and red onions, and gather the olives and feta cheese. Set these aside for assembly.
  4. Assemble the Bowls: Begin by placing a base of roasted sweet potatoes in each serving bowl. Spoon the seasoned ground beef on top of the sweet potatoes. Arrange the fresh toppings around or over the beef: cottage cheese, diced cucumber, chopped tomatoes, radishes, crumbled feta, sliced red onions, and olives.
  5. Finish and Serve: Complete each bowl with a dollop of hummus and a light drizzle of hot honey if you like a spicy-sweet kick. Serve immediately for a nourishing and satisfying meal.

Notes

  • You can substitute the 7 spice blend with your favorite seasoning mix if unavailable.
  • For a vegetarian version, replace ground beef with seasoned cooked lentils or a plant-based meat alternative.
  • Adjust the amount of hot honey to your preferred spice level, or omit it for a milder flavor.
  • Leftover components can be stored separately in airtight containers for up to 3 days for quick meal assembly.
  • Use full-fat or low-fat cottage cheese based on your dietary preference.
