Description

A hearty and comforting one-pan dinner that’s quick to prepare and packed with savory flavor. Ground beef, rice, vegetables, and a cheesy topping come together for a weeknight meal the whole family will love.


Ingredients

  • 1 lb ground beef (85% lean preferred)
  • 1 cup long-grain white rice (uncooked)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 (14.5 oz) can diced tomatoes, with juice
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional)
  • Chopped fresh parsley, for garnish (optional)


Instructions

  1. Heat a large skillet over medium-high heat. Add a splash of oil, then sauté onion and bell pepper until softened, about 3–4 minutes.
  2. Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat if needed.
  3. Stir in garlic, paprika, and additional seasoning. Cook for 30 seconds.
  4. Add rice, canned tomatoes with juice, Worcestershire sauce, and beef broth. Stir to combine and bring to a simmer.
  5. Reduce heat to low, cover, and cook for 18–20 minutes or until rice is tender and liquid is absorbed.
  6. Remove lid, sprinkle with shredded cheddar cheese, and cover again for 2–3 minutes to melt.
  7. Garnish with chopped parsley and serve warm.

Notes

  • For extra flavor, add a pinch of cumin or chili powder.
  • Substitute ground turkey or chicken for a lighter version.
  • Adjust cheese or skip entirely for a dairy-free version.
