Description
A hearty and comforting one-pan dinner that’s quick to prepare and packed with savory flavor. Ground beef, rice, vegetables, and a cheesy topping come together for a weeknight meal the whole family will love.
Ingredients
- 1 lb ground beef (85% lean preferred)
- 1 cup long-grain white rice (uncooked)
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes, with juice
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (optional)
- Chopped fresh parsley, for garnish (optional)
Instructions
- Heat a large skillet over medium-high heat. Add a splash of oil, then sauté onion and bell pepper until softened, about 3–4 minutes.
- Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat if needed.
- Stir in garlic, paprika, and additional seasoning. Cook for 30 seconds.
- Add rice, canned tomatoes with juice, Worcestershire sauce, and beef broth. Stir to combine and bring to a simmer.
- Reduce heat to low, cover, and cook for 18–20 minutes or until rice is tender and liquid is absorbed.
- Remove lid, sprinkle with shredded cheddar cheese, and cover again for 2–3 minutes to melt.
- Garnish with chopped parsley and serve warm.
Notes
- For extra flavor, add a pinch of cumin or chili powder.
- Substitute ground turkey or chicken for a lighter version.
- Adjust cheese or skip entirely for a dairy-free version.
