Description

This Ground Beef and Potatoes Casserole is a hearty and comforting meal that’s perfect for a cozy family dinner. Layers of seasoned ground beef, thinly sliced potatoes, creamy mushroom sauce, and melted cheddar cheese come together in a delicious bake that’s sure to please everyone at the table.


Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme

Additional Ingredients:

  • 3 cups russet potatoes, peeled and thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup whole milk
  • 2 tablespoons sour cream
  • 1 tablespoon olive oil
  • Chopped fresh parsley (for garnish)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Sauté onions and beef: In a skillet, sauté onion in olive oil until softened. Add garlic, then ground beef and cook until browned. Season with salt, pepper, paprika, and thyme.
  3. Prepare sauce: Whisk together cream of mushroom soup, milk, and sour cream.
  4. Layer ingredients: In the baking dish, layer potatoes, beef, cheese, and soup mixture twice.
  5. Bake: Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15–20 minutes until golden and tender.
  6. Rest and garnish: Let it rest for 10 minutes before serving. Garnish with parsley.

Notes

  • For added flavor, mix in frozen peas or corn.
  • You can use cream of chicken or cheddar soup as substitutes.
  • Yukon Gold potatoes are a good alternative and do not require peeling.
