Ingredients
Marinade:
1½ pounds boneless skinless chicken thighs,
3 stalks lemongrass (white part only, finely minced),
3 cloves garlic, minced,
1 small shallot, minced,
2 tablespoons fish sauce,
1 tablespoon soy sauce,
1 tablespoon brown sugar,
1 tablespoon lime juice,
1 tablespoon vegetable oil,
½ teaspoon ground black pepper
Instructions
- Prepare Marinade: In a medium bowl, combine lemongrass, garlic, shallot, fish sauce, soy sauce, brown sugar, lime juice, oil, and black pepper. Add chicken thighs, coat evenly, cover, and refrigerate for at least 1 hour.
- Grill Chicken: Preheat grill to medium-high heat. Grill chicken for 5–6 minutes per side until fully cooked and slightly charred. Rest before slicing.
- Serve: Enjoy with rice, noodles, or fresh herbs and vegetables.
Notes
- If lemongrass stalks aren’t available, use 1 tablespoon of lemongrass paste.
