Grilled Vegetable Kabobs with Fajita Butter are a flavorful, vegetarian dish featuring skewered vegetables like bell peppers, zucchini, and onions, all grilled to perfection and served with a spicy and creamy fajita butter sauce.
Ingredients
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- Salt and pepper to taste
- Wooden skewers (soaked in water for 30 minutes)
- 1/2 cup unsalted butter, softened
- 1 tbsp lime juice
- 1 tsp fajita seasoning
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the grill to medium-high heat.
- Thread the bell peppers, zucchini, onions, and cherry tomatoes onto the skewers, alternating the vegetables.
- Brush the vegetables with olive oil and season with salt and pepper.
- Place the vegetable kabobs on the grill and cook for 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
- While the vegetables are grilling, prepare the fajita butter by combining the softened butter, lime juice, fajita seasoning, chili powder, garlic powder, smoked paprika, cumin, salt, and black pepper in a bowl. Mix until smooth.
- Once the kabobs are done, remove them from the grill and serve with the fajita butter on the side or drizzled over the top.
Notes
- For a spicier version, add more chili powder or some hot sauce to the fajita butter.
- Serve with a side of rice or flatbread for a complete meal.
- Vegetable combinations can be adjusted based on preference, such as adding mushrooms or eggplant.
