Description

This Grilled Mojo Chicken Cuban Sandwich combines juicy, marinated chicken breasts grilled to perfection, layered with Swiss cheese, ham, and pickles, all pressed in a sandwich roll to achieve a crispy, melty delight. Inspired by classic Cuban flavors with a smoky twist, it’s a satisfying meal perfect for lunch or dinner.

Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 1 cup Mojo marinade

Sandwich Components

  • 4 slices Swiss cheese
  • 8 slices ham
  • 8 slices pickles
  • 4 sandwich rolls
  • Mustard, to taste

Instructions

  1. Marinate the chicken: Place the chicken breasts in a shallow dish or zip-lock bag and pour the Mojo marinade over them. Make sure each piece is fully coated. Cover and refrigerate for at least 1 hour to allow the flavors to deeply penetrate the meat.
  2. Grill the chicken: Preheat your grill to medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C), ensuring the chicken is fully cooked and juicy.
  3. Assemble the sandwiches: Slice the sandwich rolls open and layer each with a slice of Swiss cheese, two slices of ham, two slices of pickles, and then the grilled mojo chicken breast. Add mustard to taste on the inside of the roll.
  4. Press the sandwiches: Heat a panini press or grill pan. Place the assembled sandwiches inside and press for 3-5 minutes, or until the cheese has melted and the bread is toasted and crispy on the outside.
  5. Serve and enjoy: Remove the sandwiches from the press, slice if desired, and serve hot for the best flavor and texture experience.

Notes

  • For best results, use fresh Mojo marinade or prepare your own using garlic, citrus juices, and herbs.
  • If you don’t have a panini press, a heavy skillet or grill pan with a weighted top can work for pressing the sandwich.
  • Adjust mustard quantity according to your preference or substitute with mayonnaise or a spicy sauce for variation.
  • Make sure chicken is cooked thoroughly to avoid any foodborne illness risks.
