These Grilled Garlic Herb Potatoes are a flavorful and easy side dish perfect for summer cookouts. Baby potatoes are seasoned with garlic, rosemary, thyme, and oregano, then grilled to perfection.

Ingredients

Baby Potatoes:

  • 1.5 pounds baby potatoes (halved)

Seasoning:

  • 2 tablespoons olive oil
  • 3 garlic cloves (minced)
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the Grill: Preheat the grill to medium heat.
  2. Toss Potatoes: In a large bowl, toss halved baby potatoes with olive oil, garlic, rosemary, thyme, oregano, salt, and pepper until coated.
  3. Grill Potatoes: Transfer seasoned potatoes to a grill basket or foil. Grill for 20-25 minutes, shaking occasionally, until golden and tender.
