Description
These Grilled Garlic Herb Potatoes are a flavorful and easy side dish, perfect for BBQs and weeknight dinners alike. Baby potatoes are tossed with olive oil, fresh garlic, and fragrant herbs, then grilled to golden perfection, resulting in tender, savory bites with a hint of smokiness.
Ingredients
Potatoes
- 1 lb baby potatoes, halved or quartered
Seasoning
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat Grill: Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates or use a grill pan to prevent sticking.
- Prepare Potatoes: In a large mixing bowl, toss the halved or quartered baby potatoes with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper until they are evenly coated.
- Arrange on Grill: Place the seasoned potatoes in a grill basket or directly on the grill surface. If using a grill basket, cover it with a lid to help cook the potatoes evenly.
- Grill Potatoes: Grill the potatoes for 20-25 minutes, turning them occasionally every 5-7 minutes to ensure they cook evenly and develop a golden brown color. The potatoes should be fork-tender when done.
- Serve and Garnish: Remove the grilled potatoes from the grill and transfer to a serving dish. Garnish with freshly chopped parsley, if desired, and serve hot.
Notes
- Using a grill basket helps keep smaller potato pieces from falling through the grates.
- Adjust herbs to your preference—oregano or basil can be good substitutes.
- Check the potatoes regularly to prevent burning and promote even cooking.
- These potatoes pair wonderfully with grilled meats or as a vegetarian-friendly side.
