Ingredients
Chicken
- 4 boneless, skinless chicken breasts
Marinade
- 2 ripe peaches, pitted and diced
- 1/4 cup honey
- 2 tablespoons soy sauce (use gluten-free soy sauce for gluten-free diet)
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- 1 tablespoon chili garlic sauce (adjust to spice preference)
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Salt and black pepper to taste
Garnish (optional)
- Fresh cilantro or green onions, chopped
Instructions
- Prepare the Marinade: In a blender or food processor, combine the diced peaches, honey, soy sauce, apple cider vinegar, olive oil, chili garlic sauce, minced garlic, grated ginger, salt, and black pepper. Blend until smooth to create the marinade.
- Reserve Marinade for Basting: Set aside 1/4 cup of the blended marinade to use later for basting while grilling.
- Marinate the Chicken: Place the chicken breasts in a shallow dish or zip-top bag and pour the remaining marinade over. Refrigerate and marinate for at least 1 hour, or up to 6 hours for deeper flavor.
- Preheat the Grill: Heat your grill to medium-high heat to prepare for cooking.
- Grill the Chicken: Remove chicken from marinade, discarding the used marinade. Place chicken on the grill and cook for 5–6 minutes on each side, or until the internal temperature reaches 165°F (74°C). During the last few minutes, baste the chicken with the reserved marinade to enhance flavor and moisture.
- Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes to allow juices to redistribute.
- Garnish and Serve: Garnish the grilled chicken breasts with chopped fresh cilantro or green onions if desired, and serve with your favorite sides such as grilled corn, rice, or a fresh summer salad.
Notes
