Perfect for a quick lunch or light dinner, these wraps combine smoky grilled chicken with crisp lettuce, juicy tomatoes, and a hint of spice from optional chipotle mayo or jalapeños.
Ingredients
Chicken and Seasoning
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Wrap and Fillings
- 4 large flour tortillas or wraps
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup red onion, thinly sliced
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup ranch or chipotle mayo (optional)
Instructions
- Preheat Grill: Preheat a grill or grill pan over medium-high heat to ensure it’s hot enough for cooking the chicken evenly.
- Season the Chicken: Rub the chicken breasts evenly with olive oil, garlic powder, smoked paprika, salt, and black pepper to infuse flavor before grilling.
- Grill the Chicken: Place the seasoned chicken on the grill and cook for 5–6 minutes per side, or until the internal temperature reaches 165°F, ensuring the chicken is fully cooked and juicy.
- Rest and Slice: Remove the chicken from the grill and let it rest for a few minutes to retain juices, then slice it thinly for easier wrapping.
- Warm the Tortillas: Lightly warm the tortillas to make them soft and pliable, preventing tearing during wrap assembly.
- Assemble the Wraps: On each tortilla, layer shredded lettuce, grilled chicken slices, avocado slices, diced tomatoes, red onion, shredded cheese, and add a drizzle of ranch or chipotle mayo if desired.
- Roll and Serve: Roll up the wraps tightly by folding in the sides first, then rolling from one edge to the other. Slice in half for easier eating and serve immediately.
