Description

Delicious and healthy grilled chicken wraps with creamy avocado, fresh vegetables, and melted cheese all wrapped in a soft tortilla. Perfect for a quick lunch or light dinner, these wraps combine smoky grilled chicken with crisp lettuce, juicy tomatoes, and a hint of spice from optional chipotle mayo or jalapeños.

Ingredients

Chicken and Seasoning

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Wrap and Fillings

  • 4 large flour tortillas or wraps
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup ranch or chipotle mayo (optional)

Instructions

  1. Preheat Grill: Preheat a grill or grill pan over medium-high heat to ensure it’s hot enough for cooking the chicken evenly.
  2. Season the Chicken: Rub the chicken breasts evenly with olive oil, garlic powder, smoked paprika, salt, and black pepper to infuse flavor before grilling.
  3. Grill the Chicken: Place the seasoned chicken on the grill and cook for 5–6 minutes per side, or until the internal temperature reaches 165°F, ensuring the chicken is fully cooked and juicy.
  4. Rest and Slice: Remove the chicken from the grill and let it rest for a few minutes to retain juices, then slice it thinly for easier wrapping.
  5. Warm the Tortillas: Lightly warm the tortillas to make them soft and pliable, preventing tearing during wrap assembly.
  6. Assemble the Wraps: On each tortilla, layer shredded lettuce, grilled chicken slices, avocado slices, diced tomatoes, red onion, shredded cheese, and add a drizzle of ranch or chipotle mayo if desired.
  7. Roll and Serve: Roll up the wraps tightly by folding in the sides first, then rolling from one edge to the other. Slice in half for easier eating and serve immediately.

Notes

  • These wraps can be served warm or chilled, depending on your preference.
  • For a spicy kick, add sliced jalapeños or your favorite hot sauce.
  • Use low-carb tortillas or sturdy lettuce leaves instead of flour wraps for a lower-carb option.
  • To make this recipe gluten-free, opt for gluten-free tortillas or wraps.
