Description

Greek Veggie Pizza Squares are a delicious and colorful appetizer or light meal featuring Mediterranean-inspired toppings on a soft crust.


Ingredients

  • 1 (8 oz) can refrigerated crescent roll dough
  • 1/2 cup hummus (any flavor)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup sliced black olives
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Unroll crescent roll dough and press into a greased 9×13-inch baking sheet to form a crust. Press seams to seal.
  3. Bake the crust for 10-12 minutes or until golden brown. Let cool completely.
  4. Spread hummus evenly over the cooled crust.
  5. Sprinkle feta cheese evenly over the hummus.
  6. Top with chopped cucumber, tomatoes, red onion, and black olives.
  7. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
  8. Garnish with chopped fresh parsley.
  9. Cut into squares and serve chilled or at room temperature.

Notes

  • You can use any flavor of hummus to vary the taste.
  • Use pre-chopped veggies to save time.
  • For extra crunch, add chopped bell peppers or shredded carrots.
