It’s a lighter twist on your usual burger – perfect for busy weeknights or easy entertaining.

Ingredients

Units Scale

For the Turkey Patties

  • 1 lb ground turkey (preferably 93% lean)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped fresh parsley
  • 1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For Serving

  • 4 whole wheat or regular hamburger buns, lightly toasted
  • 1 small cucumber, thinly sliced
  • 1 medium tomato, sliced
  • 1/4 small red onion, thinly sliced
  • 1/4 cup tzatziki sauce, plus extra for serving
  • Butter lettuce or baby spinach leaves

Instructions

  1. Make the Patty Mixture – In a large bowl, combine the ground turkey, crumbled feta, chopped red onion, minced garlic, parsley, oregano, lemon zest, dill, salt, and black pepper. Gently combine using your hands or a fork, being careful not to overmix so the patties stay tender.
  2. Shape the Patties – Divide the turkey mixture into four equal portions. With damp hands, shape each portion into a patty about 1/2-inch thick. Press a small dimple in the center of each patty to help them cook evenly and prevent puffing up on the grill or pan.
  3. Cook the Burgers – Preheat a grill or stovetop grill pan over medium-high heat and lightly oil the grates. Grill the turkey patties for 5 to 6 minutes per side, or until golden brown and an internal thermometer reads 165°F. Transfer to a plate and let rest for a couple of minutes.
  4. Assemble the Burgers – Spread a generous spoonful of tzatziki sauce on the bottom bun. Top with lettuce or spinach, a turkey patty, slices of cucumber, tomato, and red onion. Add more tzatziki if you like, then cap with the top bun. Serve immediately.

Notes

  • Mix the turkey burger ingredients just until combined for the juiciest texture.
  • If grilling outdoors, lightly oil the grates to prevent sticking.
  • You can make the patties and chill them up to one day ahead for easy meal prep.
  • Try adding roasted red peppers or olives as additional toppings for extra Mediterranean flavor.
