  • 1/2 cup crumbled feta cheese

Instructions

  1. Season the Shrimp: Pat the shrimp dry and toss them in a bowl with kosher salt and pepper. Set aside while you prepare the sauce.
  2. Make the Tomato Sauce: Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for 1 more minute until fragrant.
  3. Add Tomatoes and Simmer: Pour in the diced tomatoes (and their juices), white wine (if using), oregano, and red pepper flakes. Bring to a simmer, and let cook for 5-7 minutes, stirring occasionally, until slightly thickened. Season with salt and pepper to taste.
  4. Cook the Shrimp: Add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes, turning halfway, just until they turn pink and opaque.
  5. Finish with Feta: Remove skillet from heat. Sprinkle crumbled feta evenly over the shrimp and tomato mixture. Cover the skillet for 1-2 minutes to allow the feta to soften.
  6. Garnish and Serve: Uncover and sprinkle with fresh parsley or dill. Serve immediately with lemon wedges on the side, and enjoy!
