Marinade

  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt

Instructions

  1. Make the Marinade: In a small bowl, whisk together the olive oil, fresh lemon juice, minced garlic, dried oregano, dried thyme, Dijon mustard, kosher salt, and freshly ground black pepper until all ingredients are well combined to create a flavorful marinade.
  2. Marinate the Chicken: Place the chicken thighs in a large bowl or a zip-top bag. Pour the marinade over the chicken, ensuring all pieces are thoroughly coated. Cover the bowl or seal the bag and refrigerate for 1 to 2 hours, or up to 8 hours for deeper flavor.
  3. Preheat the Oven: Set your oven temperature to 350°F (180°C) to prepare for roasting the chicken evenly and thoroughly.
  4. Transfer to Baking Dish: Arrange the marinated chicken thighs skin side up in a baking dish. Pour any leftover marinade over the top of the chicken to enhance flavor and moisture during baking.
