Enjoy a taste of the Mediterranean with these flavorful Greek Chicken Bowls. Marinated grilled chicken served over quinoa or rice with fresh vegetables, feta cheese, and tzatziki sauce.
Ingredients
For the Chicken:
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowl:
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup tzatziki sauce
- fresh parsley or dill for garnish
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
- Grill or Sear the Chicken: Cook the chicken over medium heat for 6–7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
- Assemble the Bowls: Divide quinoa or rice between two bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese. Drizzle with tzatziki sauce and garnish with fresh herbs. Serve immediately.
Notes
- You can use chicken thighs for more flavor or cauliflower rice for a low-carb option.
- This bowl is great for meal prep; keep the tzatziki sauce separate until serving.
