Description

Grandma’s Rosemary Dinner Rolls are soft, fluffy, and infused with the fragrant flavor of fresh rosemary. Perfect for holiday dinners or any special meal, these homemade rolls are brushed with melted butter and sprinkled with flaky sea salt for an irresistible crust and rich taste.


Ingredients

Dough Ingredients

  • 3 1/2 cups all-purpose flour (plus more as needed)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup warm milk (110°F)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter (melted)
  • 1 large egg
  • 1 1/2 teaspoons salt
  • 1 tablespoon fresh rosemary (finely chopped)

For Topping

  • 2 tablespoons unsalted butter (melted, for brushing)
  • Extra rosemary and flaky sea salt (optional)


Instructions

  1. Activate Yeast: In a small bowl, combine the warm milk, yeast, and a pinch of sugar. Let sit for 5–10 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Mix Ingredients: In a large mixing bowl or stand mixer, combine the flour, remaining sugar, salt, and chopped rosemary. Add the yeast mixture, melted butter, and egg. Mix until a soft dough forms.
  3. Knead Dough: Knead the dough on a floured surface for 8–10 minutes by hand, or use a stand mixer with a dough hook for 5–6 minutes, until smooth and elastic. Add more flour 1 tablespoon at a time if the dough is too sticky.
  4. First Rise: Place the dough in a greased bowl, cover with a towel or plastic wrap, and let it rise in a warm place for 1 hour, or until it has doubled in size.
  5. Shape Rolls: Punch down the dough and divide it into 12–15 equal pieces. Shape each into a ball and place them in a greased 9×13-inch baking dish or on a parchment-lined baking sheet. Cover and let them rise again for 30–45 minutes.
  6. Bake: Preheat your oven to 375°F (190°C). Bake the rolls for 18–22 minutes, or until golden brown on top.
  7. Finish and Serve: Remove the rolls from the oven and immediately brush them with melted butter. Optionally, sprinkle extra rosemary and flaky sea salt on top. Serve warm for best flavor and texture.

Notes

  • These rolls can be made ahead by refrigerating after shaping. Bake them the next day when ready.
  • They freeze well—simply freeze baked rolls and reheat in the oven before serving.
