Description
This Gooey Nutella-Stuffed Cookie Pie is a decadent dessert combining a soft, chocolate chip cookie crust with a rich, melted Nutella center. Baked to golden perfection, it’s perfect for sharing and enjoying warm, especially with a scoop of vanilla ice cream.
Ingredients
For the Cookie Dough:
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups semi-sweet chocolate chips
For the Filling:
- 3/4 cup Nutella (or other chocolate-hazelnut spread)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment paper to prevent sticking.
- Make the Cookie Dough: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract to combine evenly.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, mixing until just combined. Finally, fold in the semi-sweet chocolate chips evenly throughout the dough.
- Assemble the Pie: Press half of the cookie dough evenly into the bottom and up the sides of the prepared pie dish, creating a uniform base. Spread the Nutella evenly over this dough layer, leaving about a half-inch border around the edges for sealing.
- Top with Remaining Dough: Drop spoonfuls of the remaining cookie dough over the Nutella layer. Gently spread and press the dough to cover the Nutella, sealing the edges as best as possible to enclose the filling.
- Bake: Place the pie dish in the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown and the center is set but still soft, indicating a gooey texture inside.
- Cool and Serve: Allow the cookie pie to cool for at least 10 to 15 minutes to set before serving. For an extra indulgent treat, serve warm with a scoop of vanilla ice cream or a drizzle of additional Nutella.
Notes
- Be careful not to overbake; the center should remain slightly soft and gooey for the best texture.
- Using room temperature butter helps achieve the perfect creamy dough consistency.
- You can substitute Nutella with any chocolate-hazelnut spread if desired.
- For easier removal, lining the pie dish with parchment paper is recommended.
- This dessert tastes best when served warm.
