Ingredients

For the Muffins:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cream Cheese Filling:

  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract

For the Cinnamon Sugar Topping:

  • 2 tablespoons granulated sugar
  • ½ teaspoon cinnamon
  • 1 tablespoon butter, melted


Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease each cup well to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, salt, and ground cinnamon until evenly combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until the mixture is smooth and homogeneous.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredient bowl and gently stir with a spatula until just combined. Take care not to overmix to keep the muffins light and tender.
  5. Prepare Cream Cheese Filling: In a small bowl, beat the softened cream cheese with 2 tablespoons sugar and ½ teaspoon vanilla extract until the mixture is smooth and creamy.
