Ingredients
For the Soup:
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 head cauliflower, cut into florets
- 1 cup diced Yukon gold potatoes
- 4 cups vegetable broth
- 1 (15-ounce) can coconut milk
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups chopped kale or spinach
Optional Toppings:
- Red pepper flakes
- Chopped herbs
- Swirl of coconut milk
Instructions
- Heat the Olive Oil: In a large pot, heat olive oil over medium heat.
- Sauté Aromatics: Add chopped onion and cook until soft. Stir in garlic, ginger, turmeric, and cumin.
- Add Vegetables and Broth: Put in cauliflower, potatoes, vegetable broth, coconut milk, salt, and pepper. Simmer until vegetables are tender.
- Puree the Soup: Blend until smooth. Stir in lemon juice and greens, simmer for 5 minutes.
- Adjust and Serve: Season to taste. Serve hot, topped with optional toppings.
