Description

These classic Sausage Rolls are flaky, golden puff pastry filled with a flavorful pork sausage mixture seasoned with garlic, onion powder, and fresh herbs. Perfect for appetizers, snacks, or party treats, they bake up crisp and savory, delivering a delicious handheld bite everyone will love.

Ingredients

Pastry

  • 1 package puff pastry (contains 2 sheets, 17.3 ounces), defrosted

Sausage Filling

  • 1 pound pork sausage
  • 2 eggs, divided
  • ⅔ cup Italian breadcrumbs
  • 1½ tablespoons minced fresh parsley
  • 1 teaspoon minced fresh thyme
  • 1½ teaspoons minced garlic
  • 1½ teaspoons onion powder
  • 1 tablespoon water

Instructions

  1. Prep: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Make the filling: In a large bowl, combine the pork sausage, 1 egg, Italian breadcrumbs, parsley, thyme, garlic, and onion powder. Mix thoroughly until evenly blended to ensure great flavor in every bite.
  3. Prepare the dough: Place the defrosted puff pastry sheets on a clean, non-stick surface. Lightly roll each sheet to make them slightly thinner. Cut each sheet into 3 equal long rectangles, creating 6 rectangles total. Use the fold lines in the pastry as guides if folded.
  4. Fill the pastry dough: Spoon small amounts of the sausage mixture into the center of each dough rectangle, forming a long line, leaving about an inch of pastry free on each side. Shape the sausage mix into a long sausage shape. Fold the pastry edges over the filling and pinch the seams closed firmly with a fork to seal completely.
  5. Slice: Use a sharp knife to cut each sealed sausage roll log into 2-inch slices. Arrange the sausage rolls seam-side down on the prepared baking sheet, spacing about an inch apart.
  6. Add an egg wash: In a small bowl, whisk together the remaining egg and 1 tablespoon water. Brush this mixture generously over the tops of each sausage roll. This step helps achieve a beautiful, glossy golden crust when baked.
  7. Bake: Place the baking sheet in the preheated oven and bake for 15 minutes or until the pastry puffs up and turns golden brown. Remove from oven and allow to cool slightly before serving.

Notes

  • For best results, ensure puff pastry is fully thawed but still cold before handling to prevent sticking and tearing.
  • You can customize the filling by adding grated cheese or different herbs like sage for varied flavor.
  • Make sure to seal the edges well to avoid sausage mixture leaking out during baking.
  • Serve sausage rolls warm or at room temperature with mustard or your favorite dipping sauce.
