Description
This cozy and cheesy Gnocchi Bake features pillowy potato gnocchi baked in rich marinara, melted mozzarella, parmesan, and optional sausage or spinach. It’s pure comfort food, perfect for weeknight dinners or sharing with family and friends.
Ingredients
- 1 lb potato gnocchi
- 2 cups marinara sauce
- 1 1/2 cups shredded whole milk mozzarella cheese
- 1/3 cup grated parmesan cheese
- 1/2 lb Italian sausage, casings removed (optional)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions
- Preheat oven to 400°F (200°C). Cook gnocchi in salted water until they float, about 2–3 minutes. Drain and set aside.
- In a large skillet, heat olive oil. Brown sausage (if using), then add garlic and sauté for 30 seconds. Add spinach and cook until wilted.
- Pour in marinara sauce and simmer 3–5 minutes. Season with salt and pepper to taste.
- Spread a thin layer of sauce mixture in a baking dish. Add gnocchi and remaining sauce, folding gently to coat.
- Top with mozzarella and parmesan. Bake uncovered for 20–25 minutes, until cheese is bubbly and golden. Broil 2–3 minutes for extra browning if desired.
- Let rest 5 minutes. Garnish with fresh basil and serve hot.
Notes
- Make vegetarian by omitting sausage and adding extra veggies like mushrooms or zucchini.
- Use store-bought or homemade gnocchi; gluten-free versions work well too.
- Prep ahead by assembling and refrigerating the dish unbaked up to 24 hours in advance.
