Ingredients
Filling:
- 6 cups sliced fresh or frozen peaches (peeled if fresh)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon cornstarch
Topping:
- 1 cup gluten-free all-purpose flour blend
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (cold and cubed)
- 1/2 cup milk (dairy or non-dairy)
- 1 large egg
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Prepare the filling: In a large bowl, combine the peaches, sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Transfer to a greased baking dish.
- Make the topping: In a separate bowl, mix the flour, sugar, baking powder, and salt. Cut in the butter and add the milk and egg. Spread over the peaches.
- Bake: Bake for 35–40 minutes until golden and bubbly. Cool slightly before serving.
