Ingredients

Filling:

  • 6 cups sliced fresh or frozen peaches (peeled if fresh)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch

Topping:

  • 1 cup gluten-free all-purpose flour blend
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 1/2 cup milk (dairy or non-dairy)
  • 1 large egg


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Prepare the filling: In a large bowl, combine the peaches, sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Transfer to a greased baking dish.
  3. Make the topping: In a separate bowl, mix the flour, sugar, baking powder, and salt. Cut in the butter and add the milk and egg. Spread over the peaches.
