Ingredients
Dough:
- 1 1/2 cups gluten-free all-purpose flour blend
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon dried Italian seasoning
- 3/4 cup plain Greek yogurt
- 1 tablespoon olive oil
Toppings:
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup mini pepperoni slices or other toppings of choice (such as mushrooms, bell peppers, or olives)
- Fresh basil leaves for garnish
Instructions
- Preheat the oven and prepare the dough: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the gluten-free flour blend, baking powder, baking soda, salt, and Italian seasoning. Add the Greek yogurt and olive oil, mixing until a dough forms.
- Shape the mini pizzas: Knead the dough lightly until smooth, then divide it into 8 small balls. Flatten each ball into a round mini pizza base and place them on the prepared baking sheet.
- Add toppings and bake: Spoon about 1 tablespoon of pizza sauce onto each base, spreading evenly. Sprinkle with mozzarella cheese and add desired toppings. Bake for 12 to 15 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Finish and serve: Remove from the oven and top with fresh basil leaves before serving.
