Ingredients
For the Cookies:
- ½ cup unsalted butter, softened
 - 4 oz cream cheese, softened
 - ¾ cup granulated sugar
 - 1 large egg
 - 1 tsp vanilla extract
 - ½ tsp almond extract (optional)
 - 2 cups gluten-free all-purpose flour blend (with xanthan gum)
 - ½ tsp baking powder
 - ¼ tsp salt
 
Instructions
- Cream Butter, Cream Cheese, and Sugar: In a large bowl, cream together the butter, cream cheese, and sugar until light and fluffy.
 - Add Wet Ingredients: Add the egg, vanilla extract, and almond extract if using, and mix until well combined.
 - Combine Dry Ingredients: In a separate bowl, whisk together the gluten-free flour, baking powder, and salt.
 - Form Dough: Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms. Cover and chill the dough for at least 1 hour.
 - Preheat and Bake: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Roll dough into 1-inch balls, place on prepared sheets, flatten slightly, and bake for 10–12 minutes until edges are golden. Cool before transferring to a wire rack.
